This is the second time (first time is here) I have written about these burgers. Still haven’t quite figured them out because they remain too soft to fry. They are completely vegan and taste more like falafel than a veggie burger. They are super yummy and we had a lot of luck with them in the oven (broil is your friend).
Zucchini Quinoa Burgers
1 clove garlic, minced
1 cup onion, chopped finely
1 1/2 cup zucchini, grated
1/2 cup pumpkin seeds
3/4 teaspoons sea salt, plus more to taste
Black pepper to taste
1 1/2 cup cooked chickpeas
1 cup cooked quinoa
2/3 cups water
2 tablespoons dijon mustard
1 tablespoon lemon juice
1 tablespoon dill
1 tablespoon oregano
1 teaspoon paprika

I’ve had a bit of a lifestyle change since I last checked in here on the blog: I’ve arrived in Budapest, Hungary to study abroad for the semester! This past week has felt like a whirlwind, and I’m excited to share it all with you.
Upon arriving last Sunday (one week ago), I was jetlagged, exhausted, and overwhelmed. So many unknowns faced me, which was simultaneously exciting and stressful. Upon arriving at the airport, I met my lovely tandem partner (a student from Hungary who is here to help me along the way). I began unpacking in the dorm, met my roommates, and explored the city for a bit that night. Stress is experienced almost everyday by everyone. People experience it in different ways and different strengths.
Stress is the situation or events that put pressure on us and our reaction to being placed under pressure.
But what has stress got to do with mental health?
Well there are 2 reasons. Stress can be caused by a mental health problem and vice versa, a mental health problem can be caused by stress.
For example, if you are constantly stressed at work because of the people around your or because of situations, you could experience anxiety or depression. On the flip side, if you suffer with anxiety, for example, you may struggle to do certain things which could begin to stress you out. Oh what a vicious cycle!
